Enjoy my sample menu of low glycemic meals that I prepared in my home over the past week!

Low glycemic eating is part of my Wellbody Weight Loss Program which encompasses eating foods from the Glycemic Index that are rated 55 and below on a scale of 0-100.  You really don't have to get too caught up in the numbers, just understand the concept.  

The goal is to stock your kitchen with lots of green veggies, wonderful berries, citrus and other fruit, complex whole grains, lean meats and good fats (olive oil, coconut oil, omega’s). 

Stay away from “white foods”: potatoes, flour products and sugar. 

We want to make sure that we avoid foods that give you a quick sugar spike (remember that the “white foods” quickly break down to sugar) because this creates an unwanted cycle of cravings and imbalance.

By eating this way you will feel full longer after eating, boost your metabolism, reduce inflammation in the body and balance your blood sugar and shed unwanted pounds.

I often get asked for suggestions on what to eat and now you are just steps away from taking on low glycemic eating. Here is a 7 day sample of dinners I made for my family:

Meal 1- Baked salmon with roasted brussel's sprouts and mashed sweet potatoes (sweet potatoes must be boiled not baked)

Meal 2- Shrimp tacos with avocado, lettuce, tomatoes, green onion and tomatillo salsa on crisped brown rice tortillas 

Meal 3- Stir fried eggplant with fresh basil with roasted chickpeas

Meal 4- Lentil Soup; red lentils, onion, garlic, veggie broth, cumin, curry and cardamon… with green salad

Meal 5- Roasted chicken, quinoa with kale salad topped with cherry tomatoes and walnuts, dressed with extra virgin olive oil and rice vinegar

Meal 6- Egg frittata with tuna, shrimp, broccoli, zucchini, garlic, mushrooms and cherry tomatoes.  Served on a bed a baby spinach drizzled with extra virgin olive oil and a splash of rice vinegar.

Meal 7-   Mexican chicken salad; mixed greens topped with black beans (or pinto beans), avocado, jicama, grape tomatoes and chicken, dressed with a dressing made from extra virgin olive oil, diced garlic and lime
