Goodness gracious great granola

Ever have those times when you just need a handful of something to satisfy the quickly emerging hunger you know is coming on fast?  

Granola is an easy snack to keep on hand at the house or pack up to take on the go.  The other day I went to buy a package and shuttered at the $7 price tag.  I thought, "well I can make that"-- so I did.  I really made this for my daughter who is addicted to toddler granola bars.  I wanted a home made alternative that I could whip up in a flash.

Here's the recipe...

Ingredients

3 cups rolled oats

1/3 cup shredded coconut (omit if desired)

1/4 cup sesame seeds (or use the seeds or your choosing)

1/4 cup sunflower seeds (or use the seeds or your choosing)

1/2 cup dried cranberries or other dried fruit (dried apricots and blueberries are low glycemic)

1/3 cup grapeseed oil

1/2 cup fractioned coconut oil

1 tsp vanilla extract

1/2 cup agave nectar (low glycemic) or grade b maple syrup

1/4 tsp sea salt

a dash of cayenne for extra kick

Directions

1) Add oats to a large bowl

2) In a seperate bowl mix wet ingredients-- agave nectar (or maple syrup), vanilla and oil.

3) Add wet ingredients to the oats and mix to coat oats evenly.

4) Spread oat mixture onto a baking sheet.

5) Bake for 8-10 minutes at 350 degrees then turn oats to lightly brown.  Be sure to not over cook or brown deeply, the taste will be unpleasant.

6) Once oats are lightly browned remove from oven and add coconut, dried cranberries (or other dried fruit of your chosing), nuts and seeds.   Toss to mix and serve.
