Perfectly Pumpkiney, Sweet Potato Pie Soup (in the raw)

I wonder if a discerning tongue would find this dish more pumpkiney or filled with sweet potato pie goodness?  I say it could go either way. It’s essentially a pie in a bowl.

Imagine all the richness of your favorite fall dessert with zero guilt for eating to your heart's content. This recipe is for the pumpkin and sweet potato lovers who adore the Fall for the warming spices and flavors.  

I know... it may take a minute to wrap your mind around the name of this dish.

Please trust my taste buds and take my word that it's so worth making if you are a pumpkin or sweet potato pie fan.  

Keep in mind that this is a raw dish and is served chilled.  But just think, you get the bonus of a delicious, full flavored dish that will also offer you an abundance of whole food vitamins, healthy fats, fiber and more.

Ingredients

  • 1 cup peeled, chopped sweet potato or yam

  • 4 cups fresh carrot juice

  • 1/2 avocado (substitute with 1/2 c coconut milk if you plan to warm this soup)

  • 1 tsp agave nectar or honey

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/4 tsp grated ginger

Directions

Blend until smooth and serve in a bowl at room temp or chill in fridge.
